In September 500 people gathered in Perth to hear from MasterChef Kate Bracks about her love for food and for God. Kate shared why she believed none of us are holy (herself and the Dali Lama included!) and how she became persuaded that Jesus is our way back to God.
As promised, Kate has made available her special chocolate sauce recipe for our enjoyment.
Chocolate Sauce
Makes 250ml
100g dark chocolate, finely chopped
50g milk chocolate, finely chopped
20g butter
125ml (½ cup) pouring cream
1tsp vanilla extract
Combine all the ingredients in a microwave-safe jug or bowl and microwave on high for 30 seconds. Stir and microwave again for a further 30 seconds. Repeat, if necessary, until all the chocolate is melted. Stir vigorously until the mixture comes together to a silky-smooth consistency.
Alternatively, you can combine all the ingredients in a heatproof bowl over a saucepan of simmering water (don’t let the bottom of the bowl touch the water). When the chocolate is soft, remove from the heat and stir until smooth.
You can also add things to a basic chocolate sauce to take it to a whole new level. Try infusing the cream with vanilla bean, star anise or cinnamon before melting the chocolate into it. Alternatively, you can stir through liqueurs such as Cognac, Kahlua or Cointreau.
Chocolate sauce goes with ice cream, cakes, waffles and puddings. Just remember the golden rule – the better quality chocolate you use, the better the flavour.
